This is the recipe for dough we used everyday at school in Vegreville. The dough is extremely useful for many different bread bases.
Ingredients
1 1/4 cups warm water
2 1/2 Tbsp white sugar
2 3/4 tsp yeast
1 1/4 cups of milk - warmed
1 Tbsp + 1 tsp canola or veggie oil
1 3/4 tsp salt
4 cups flour
1 1/4 cups multigrain or Whole Wheat flour (optional: just add the same amount of white flour for a full white bread)
Directions
1. Place the water, sugar & yeast ingredients into a large liquid measuring cup & let this develop.
2. Meanwhile in a separate glass bowl warm milk in the microwave
3. Add milk, oil, salt & flour to the mixer, give it a quick stir with the kneading hook.
4. Add the yeast mixture to the flour mixture and mix with the kneading hook until it forms a soft ball in the center and is not sticky to the touch
5. Allow to rise for approximately 15-30 minutes before using dough.
Uses for the dough
- Pizza buns: roll out to 1/2 inch thickness and cut to desired size (width and length of hand is what we use) add light layer of sauce and 1/4 cup of cheese. Bake at 350 for 12 minutes.
- Individual pizzas: shape dough into size of stoneware (oven safe plate). Be sure to lightly oil plate. Have people assemble their own pizza with sauces, toppings and cheeses. Then bake for 20-25 minutes at 425.
- Pizza: shape dough as desired add toppings and bake for 25-30 minutes at 425. For best results bake on a pizza stone.
- Dinner bun: either divide the dough evenly into the desired number of rolls or using a scale measure 2 oz. of dough and shape into a ball with ridges and folds on the bottom. Grease a 9×13 pan, place buns in the pan and allow to rise for 15-30 minutes with a towel over top. Bake for 30 minutes or until they sound hollow when tapped lightly.
- Cinnamon bun: Roll out dough to 1/2 inch thickness. Spread with margarine. Heavily sprinkle with mixture of brown sugar and cinnamon (approx. 1/2 cup brown sugar & 2 1/2 Tbsp cinnamon). Roll the dough and sugar into a log. With a serrated knife cut 1 inch sections, sawing not pressing into the log. Place spiral up and tuck the end under. Allow to rise for 15 minutes and bake at 350 for 15-20 minutes.
- Savory buns: Roll out dough to 1/2 inch thickness. Spread with fun cream cheese like herb & garlic. Layer with thinly sliced meats such as ham or turkey. Sprinkle with grated cheese. Roll the dough and sugar into a log. With a serrated knife cut 1 inch sections, sawing not pressing into the log. Place spiral up and tuck the end under. Allow to rise for 15 minutes and bake at 350 for 15-20 minutes.
