Saskatoon Lentil Muffins

Canada is a lush place to grow crops during the summer months. During the winter months we need to rely on our pantry and freezer to bring out the wonderful flavours of the prairies. This recipe is almost entirely Canadian, see if you can find the few ingredients that are not native to Canada.
Ingredients
3/4 cup (188 mL) Red lentils (Cooked)
3/4 cup (188 mL) Green lentils (Cooked)
1/2 cup (125 mL) Orange juice
2 cups (500 mL) Flour
1 Tbsp (15 mL) Baking powder
1/2 tsp (2.5 mL) Salt
3/4 tsp (4.75 mL) Cinnamon
1/2 tsp (2.5 mL) Ground allspice
1/2 tsp (2.5 mL) Ground ginger
1/2 cup (125 mL) Honey
1/3 cup (75 mL) Canola oil
2 large eggs
1 3/4 cups (425 mL) Saskatoon berries
Directions
- Preheat oven to 400F/200C
- In a blender, combine 1/2 cup lentils (either colour or combination of the two) and 1/4 cup orange juice until smooth
- Sift together flour, baking powder, salt, cinnamon, allspice and ginger.
- In a separate bowl, mix together lentil puree, remaining lentils, remaining orange juice, honey, oil and eggs.
- Add the dry ingredients to the wet bowl, stirring only until dry is combined.
- Fold in the berries gently
- Spoon into muffin cups 3/4 full.
- Bake for 20-25 minutes
Note
If you're not a ginger fan you may substitute pumpkin spice for the ginger and 1/2 the amount of cinnamon.
