Sweet Sticky Rice Mango

Sometimes you have extra rice or your looking for a beautiful dessert with only a small amount of effort. This dessert allows you to play with your food, you can build your sandcastle out of rice and have fun with the presentation.
Ingredients
1 cups uncooked Sushi (sticky) rice, well rinsed
1 1/2 cup coconut milk - divided
1 cup cup water
1/4 tsp salt
2 Tbsp icing sugar
1 ripe mangoes, peeled and sliced length wise
Black sesame seeds
Fresh herb for garnish
Directions
- Place water, 1 cup coconut milk and salt in medium saucepan. Mix well to break up coconut cream. Bring to a boil and stir in rice, lower heat to simmer.
- Cover and simmer for 15-20 minutes or until most of the liquid is absorbed.
Remove from heat and allow to sit, covered, for another 5 minutes. Cool to touch. - Peel mangoes and slice each side off the stone in the center.
- Mango seeds are flat and if your knife is hitting the seed, move the knife a little off from the seed and slice down. Lay the mango slice flat and cut into big chunks.
- In small bowl combine 1/2 cup coconut milk and icing sugar.
- To serve, place a mound of rice on a plate and lay a few slices of mango on the top of the rice or on the side.
- Drizzle the coconut milk sugar mixture over and sprinkle with a little bit of sesame seeds.
