Hawaiian Pork

This recipe has been firehall and classroom tested and approved! It's sweet and savory and fills you up well for those cold winter nights!


Ingredients

2 1/2 pounds pork, cut in 1" cubes
4 tablespoons oil
1 medium onion, sliced
1 1/2 cup pineapple juice
1 carrot, julienne
1/2 cup water
1/2 cup vinegar
1/2 cup brown sugar
1 1/2 teaspoon salt
1 cup green bell pepper, diced
2 cans (1 lb 4 ounce size) pineapple chunks
2 tablespoons soy sauce
5 tablespoons cornstarch
1/2 cup water

Directions

1. Brown pork cubes and onion slices in hot oil in large skillet.

2. Add pineapple juice, water, vinegar, brown sugar and salt.

3. Cover, cook for 30 minutes. Add diced green pepper, carrot, pineapple chunks and soy sauce.

4. Add cornstarch mixed with water and cook until thickened, stirring constantly.
5. Serve over rice.
