Fajita Casserole

Casseroles don't have to include Campbell's soup. This casserole is so flavourful and colourful that it will be the big hit at your next pot luck party.
Ingredients
Chicken
Tex-Mex seasoning
Salsa
Rice
Tortillas
Cheese
Peppers
Onions
Directions
- Saute chicken that has been tossed in Tex-Mex seasoning
- Saute peppers & onions
- Cook rice, then toss generously with salsa
- Assemble the casserole from bottom up: Rice, Veggies, Chicken, Tortillas, Cheese
5. Serve hot with a green salad and avacado dressing
