Phyllo Wrapped Salmon

Phyllo is a little difficult to work with but the crunch and wonderful packing make the effort all worth it.
Ingredients
Salmon
Salt
Pepper
Butter
Phyllo
Cream cheese
Tomato pesto
Directions
1. Seared the salmon in butter with salt & pepper
2. Open the phyllo package and cover with a damp clean dishcloth, or the phyllo will dry and crack
3. Place the seared salmon on 3 layers of buttered phyllo
4. Top with cream cheese, tomato & a touch of pesto (sundried tomato pesto)
Fold into envelops
Bake until golden (about 10 minutes) in a preheated oven of 350
Serve & enjoy!
