Quinoa Chili

This can be made with ground meat or cubed. Quinoa is also optional but don't add the water if you're not using quinoa.
Ingredients
2 tsp (5 mL) vegetable oil
1 large onion, diced
1 bell pepper
2-3 cloves garlic, minced
1 lb (450g) ground beef, venison or other ground meat or cubed meat
2 tbsp chili powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
1/2 minced red chili pepper
Pinch or 2 of cayenne pepper, (optional)
1 can (800mL)diced tomatoes
1/2 cup water (only use if you're cooking this in a slow cooker)
1 can (400mL)kidney beans, drained and rinsed
1 can (400mL)of black beans, drained and rinsed
1 cup quinoa (optional but excellent if added!)
1 cup frozen corn (optional)
Slow Cooker Directions
- In a frying pan brown meat with just a tiny bit of oil. Once cooked add to the slow cooker.
- Add the rest of the ingredients except for the corn to the slow cooker and cook on low for 5-7 hours.
- Just before serving add the corn to the slow cooker to ensure it doesn't break down with the long cooking time.
Stove-top Directions
- In the bottom of a large pot brown meat with just a tiny bit of oil.
- Add the bell peppers, onion, garlic & spices to the ground beef and cook, stirring, for 5 minutes.
- Add the diced tomatoes (and their juice) and beans (thoroughly rinsed), and bring to a boil. Then add water and cook for 5 minutes
- Lower the heat and simmer for 20 minutes
