Kimchi Slaw

If you are tired of the same old coleslaw this will be a welcome change. If you're like me and were never a huge coleslaw fan, this recipe could bring you onto team coleslaw.


Ingredients

1 lime zest & juice
1 Tbsp soy sauce
1 tsp sugar
1 1/2 cups (375 ml) mayonnaise
2 Tbsp Samjang
1 apple peeled & thinly diced
1 head Savoy cabbage or Chinese cabbage julienned
370g kimchi

Directions

1. Prepare the dressing by combining lime zest & juice, soy sauce, sugar, mayonnaise & samjang. Whisk until smooth. Samjang can be found in Asian grocery stores and on occasion in the Asian aisle of the larger grocery stores. The Samjang we used is in the picture below.

2. Prepare your cabbage by thoroughly washing, then layer a few leaves and slice thinly in strips. Below is a picture of what a Chinese cabbage looks like.

3. Wash, peel and thinly dice an apple.
4. Combine all ingredients in the bowl with the dressing.
