Oven Roasted Sweet Potatoes

I can't get enough of these oven roasted sweet potatoes. they're great as a stand alone side dish or as a garnish for a soup or salad, it all depends on how you cut them.
Ingredients
Sweet potato
Olive oil
Salt or other seasoning
Directions
1. Preheat oven to 425F Degrees
2. Peel & dice sweet potato
3. Toss diced potatoes with oil and seasoning and spread out on a baking sheet
4. Roast in preheated oven for approximately 20 minutes
5. Stir the potatoes 2-3 times during their roast making sure to test one with a fork. If the fork easily goes through the potato, they are done. You may conitnue to cook them a little longer to get a nice golden colour.
6. Enjoy as a side dish, with a salad or with Sweet Potato Black Bean Soup
