Glory Bowl

This salad will fill you up and make you rethink salads. The dressing is also amazing.


Serves 8

Ingredients

8 cups cooked rice (I like to use leftover rice for this)
2 cups beets, grated (wear gloves when grating this if you do not want purple hands)
2 cups carrots, grated
2 cups almonds, toasted
2 cups spinach leaves
2 cups protein (for traditional bowls use tofu? I prefer chicken, beef, shrimp or fish)
Serve with Glory Bowl Dressing

Optional extra vegetables as you desire (I like to add a bit of purple cabbage and an onion)

Directions

  1. Assemble Glory Bowl Dressing and set aside
  2. Prepare your vegetables & toast almonds
  3. Make or reheat your favorite rice
  4. Cook or reheat your protein
  5. Set up an assembly line for the salads and have people self assemble their salad. Begin by placing cooked brown rice into bowl, top with beets, carrots, spinach leaves, almonds and your choice of protein.
  6. Drizzle with dressing and enjoy
