Nacho Cheese Sauce

The next time you offer to bring chips to a party, show up with this along with your chips and you'll impress everyone!
Ingredients
40 g Butter
40 g Flour
700 mL Warm milk
250 mL Grated cheddar cheese
60-80 mL Salsa (mild, medium or hot)
10-30 mL Chopped jalapeno
10 mL Cilantro chopped
Tortilla chips
Directions
- Melt butter in a saucepan over medium heat
- Stir in the flour to make a roux
- Slowly add the warm milk with a whisk
- Reduce heat to a simmer/low and cook for 30 minutes. Cover with a cartouche (a parchment cover with vent that sits directly on top of the liquids to prevent a skim from forming)
- Remove cartouche and add cheese, stir to fully incorporate
- Add salsa and jalapeno
- Adjust seasoning with salt and pepper if necessary then stir in the cilantro
- Serve warm with tortilla chips
If making your own tortilla chips
- Cut tortillas into wedges
- Deep fry at 325F
- Remove from the oil to a draining rack
- Lightly salt with fine sea salt
