Nacho Cheese Sauce

The next time you offer to bring chips to a party, show up with this along with your chips and you'll impress everyone!


Ingredients

40 g Butter
40 g Flour
700 mL Warm milk
250 mL Grated cheddar cheese
60-80 mL Salsa (mild, medium or hot)
10-30 mL Chopped jalapeno
10 mL Cilantro chopped
Tortilla chips

Directions

  1. Melt butter in a saucepan over medium heat
  2. Stir in the flour to make a roux
  3. Slowly add the warm milk with a whisk
  4. Reduce heat to a simmer/low and cook for 30 minutes. Cover with a cartouche (a parchment cover with vent that sits directly on top of the liquids to prevent a skim from forming)

  1. Remove cartouche and add cheese, stir to fully incorporate
  2. Add salsa and jalapeno
  3. Adjust seasoning with salt and pepper if necessary then stir in the cilantro
  4. Serve warm with tortilla chips

If making your own tortilla chips

  1. Cut tortillas into wedges
  2. Deep fry at 325F
  3. Remove from the oil to a draining rack
  4. Lightly salt with fine sea salt
