Roasted Red Pepper and Feta Dip

I get bored with the normal onion dip for veggie trays. This dip is wonderful with veggies and with pita wedges.


Ingredients

1 cup Roasted red peppers
1 Clove minced garlic
3/4 cup Feta cheese - crumbled
1/4 cup Plain yogurt
2 Tbsp Olive oil
Fresh basil for garnish

Directions

  1. You can used canned and drained roasted peppers or roasted from scratch by halved and seeded peppers on a cookie sheet and charring in the oven for 25 minutes. Then peel off the outer charred skin.
  2. Place all ingredients in a food processor and puree until smooth
  3. Chill to thicken slightly and serve with fresh veggies or pita wedges.
