Garlic Lemon Chicken

This is an extremely juicy and savory chicken that is quite easy to make with whatever herbs and spices you have on hand.
Ingredients
Boneless skinless chicken breast
Salt
Pepper
Paprika
Butter
Lemon - zest & juice
3-5 cloves garlic crushed but whole
Fresh herbs - oregano (optional)
1/2 cup milk or cream (cream will make a thicker sauce more than milk)
1 cup chicken broth
1/4-1/2 cup fresh Parmesan cheese (do not use the shelf stable as it will effect the flavour negatively)
Directions
1. Preheat oven to 400F degrees
2. Prepare your ingredients, crush the garlic but do not chop it. You can crush with the skin still on the clove, this helps to remove the skin much more easily.
3. Sprinkle chicken lightly with salt, pepper & paprika.
4. Preheat a deep frying pan (braiser or dutch oven would work well too) to medium high with butter.
5. Sear both sides of chicken until lightly golden. Then remove from the pan.
6. Add a little more butter to the frying pan and saute your onions, garlic, lemon zest and optional herbs.
7. Deglaze (scrape the bottom of the pan while adding a liquid) with the lemon juice, broth. Allow to simmer for 1-2 minutes.
8. Add the milk and Parmesan and stir to incorporate fully.
9. Return the chicken to the pan and pierce the largest breast with a thermometer.
10. Bake the whole pan, sauce and chicken combined, in the oven until the internal temperature of the chicken reaches 70C degrees.
