Cajun Halibut

This is a spicy but tasty rub for fish and halibut really takes the flavour nicely.


Ingredients

1 tsp (5 mL) salt
1/2 tsp (2 mL) dried oregano
1/4 tsp (2 mL) cayenne pepper
1/2 tsp (2 mL) paprika
1/4 tsp (2 mL) black pepper
1/2 tsp (2 mL) thyme
4 halibut fillets, at least 1 inch (2.5 cm) thick
2 tbsp (30 mL) olive oil

Directions

1. In small bowl, combine salt, oregano, cayenne pepper, paprika, black pepper, and thyme.

2. Sprinkle over 1 side of fillets and rub in with fingers.

3. In large ovenproof skillet, heat oil over medium-high heat. Once you place the fish in the pan sprinkle the other side
4. Sear the first side of the fish in hot skillet until browned, about 2 minutes.

5. With large spatula, turn fillets.

6. Bake in 400F (200C) oven until fish flakes easily when tested, about 5 minutes.
