Snapper

My students love making these nutty snappers. They're fun to make and fun to eat.


Yield: 4 dozen

Ingredients

1/2 cup butter
1/2 cup creamy peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 tsp vanilla
1 1/4 cups flour
144 small pecan halves
1 cup chocolate chips
2 tsp shortening

Directions

1. Cream together the butter, peanut butter & sugars.
2. Add in the vanilla & eggs.
3. In a separate bowl mix together dry ingredients then mix into the butter mixture.

To assemble

4. Set up 3 pecans in a Y shape, press a 1 inch cookie dough ball onto the pecans
5. Bake at 375 for 8-10 minutes on an ungreased cookie sheet (or on parchment paper).
6. While the cookies cool, melt chocolate chips and shortening in a sauce pan. Dip cooled cookie tops in the melted chocolate to form the snapper turtle shell.
