Lemon Fried Chicken

The tempura batter is so easy you'll never have to buy tempura batter again.
Ingredients
2 lbs chicken breasts
4 lemons juiced
Olive oil
Tempura batter
1 1/2 cup flour
2 1/4 Tbsp dry yeast
2 cups cold water
1 pinch salt
Directions
- Cut the chicken into strips or bite size pieces. Squeeze the lemon juice over the chicken and add enough olive oil to cover the chicken and let it marinate.
- Mix the tempura batter by mixing all the dry ingredients and slowly add water until you have a beautiful thick batter. Then cover with a damp towel and allow to rise for 45 minutes.
- Remove your chicken from the marinade and pat dry. Mix chicken into the tempura batter until it is fully coated.
- In a saucepan heat olive oil. Once the oil is hot place the battered chicken in the pan and fry for 2-3 minutes, until beautifully golden.
