Lemon Fried Chicken

The tempura batter is so easy you'll never have to buy tempura batter again.


Ingredients

2 lbs chicken breasts
4 lemons juiced
Olive oil

Tempura batter
1 1/2 cup flour
2 1/4 Tbsp dry yeast
2 cups cold water
1 pinch salt

Directions

  1. Cut the chicken into strips or bite size pieces. Squeeze the lemon juice over the chicken and add enough olive oil to cover the chicken and let it marinate.
  2. Mix the tempura batter by mixing all the dry ingredients and slowly add water until you have a beautiful thick batter. Then cover with a damp towel and allow to rise for 45 minutes.
  3. Remove your chicken from the marinade and pat dry. Mix chicken into the tempura batter until it is fully coated.
  4. In a saucepan heat olive oil. Once the oil is hot place the battered chicken in the pan and fry for 2-3 minutes, until beautifully golden.
