Dutch Chocolate Cake

Posted in /Cooking/Desserts/Cake on Sunday, April 02, 2017

This is my standby chocolate cake. It is better than any box cake I've tasted and so far I haven't had any students make a mistake while making it...knock on wood!

Ingredients

2 cups boiling water
1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease 3 - 9 inch round cake pans.
  3. In medium bowl, pour boiling water over cocoa, and whisk until smooth.
  4. Let mixture cool.
  5. Sift together flour, baking soda, baking powder and salt; set aside.
  6. In a large bowl, cream butter and sugar together until light and fluffy.
  7. Beat in eggs one at time,
  8. Stir in vanilla.
  9. Add the flour mixture alternately with the cocoa mixture.
  10. Spread batter evenly between the 3 prepared pans.
  11. Bake in preheated oven for 25 to 30 minutes.
  12. Allow to cool.
  13. Frost with Buttercream Frosting
