Lemon Layer Cake

This is another recipe that my students make all the time. But I very often don't have a camera in the classroom.


Yield: Full slab (or three 9×13 pans)

Ingredients

Base Layer

8 cups flour
4 cups butter
4 cups finely chopped pecans

Cream Cheese Layer

2 blocks cream cheese
1 cup icing sugar
2 cups whipping cream (pre-whip before adding to cream cheese & sugar)

Lemon Layer

4 pies worth of lemon pudding/pie filling or Lemon_Curd

Topping layer

2 cups Whipping Cream
2 Tbsp Icing Sugar
1 tsp Vanilla

Directions

Base Layer

1. Mix all the 1st layer ingredients together until crumbly
2. Press into pan and bake at 350 for 15
3. Let cool before adding second layer

Cream Cheese Layer

4. Beat cream cheese and icing sugar together well
5. Fold whipped cream into the cream cheese mixture
6. Spread over crust

Lemon Layer

7. Prepare lemon pie filling according to the directions on the package
8. Cool, stirring often. Pour over cheese layer

Topping Layer

9. Beat cream, sugar & Vanilla until stiff peaks form
10. Spread over lemon layer
11. Garnish with chopped pecans, slivered almonds or zested lemon rind
