Chocolate Pot De Creme

Think of this as the best chocolate pudding you've ever tasted!


Ingredients

1 cup milk
1 cup heavy cream
2 1/2 cups (4 oz) bittersweet chocolate
1 3/4 cups white sugar
2 tsp vanilla
1/4 cup (2 oz) coffee liqueur such as Kahlua
14 egg yolks

Directions

  1. In a double boiler melt chocolate.
  2. Slowly add sugar and milk/cream to the melted chocolate alternating the ingredients
  3. Remove from the heat and add the vanilla and Kahlua
  4. Whisk the egg yolks together, then slowly whisk them into the chocolate
  5. Pour the custard into ramekins.
  6. Put the ramekins in a pan with a tall edge and fill with water until the water reaches 1/2 way up the side of the ramekin
  7. Bake at 325F degrees until the custards are almost set in the center, approximately 30 minutes.
  8. Remove from the water bath and refrigerate until thoroughly chilled.
  9. Serve garnished with whipped cream.
