Apple Pie Bars

This is a crumble top bar and it is a great way to use soft apples.
Ingredients
Crust
4 cups flour
1 cup sugar
1 tsp baking powder
1 tsp salt
2 cups butter / margarine
4 egg yolks beaten (whites used with filling)
Filling
4 cups apples - peeled, cored and sliced 1/8 inch thick
1/2 cup sugar
1/2 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
2 egg whites slightly beaten
Directions
- Prepare 9×13 pan with parchment at the bottom and cooking spray along the sides
- Combine flour, sugar, baking powder and salt; cut in butter
- Mix in egg yolks, this will make mixture crumbly
- Press half mixture in the bottom of prepared pan
- In a separate bowl mix together filling ingredients: sugar, flour, cinnamon and nutmeg and toss over prepared apples.
- Assemble apples tossed with spices over the pressed crust
- Brush egg whites over top of the apples liberally
- Crumble the remaining crust over top of the apples
- Bake at 350 for 35 minutes
- Cool thoroughly before serving
