Stuffed Turkey Breasts

This is a healthy way to enjoy your turkey and stuffing.


Ingredients

2 turkey breasts
1 tsp kosher salt
1/2 tbsp light olive oil
1/3 cup chopped shallots
2 cloves garlic, chopped
1 1/4 cups diced butternut squash, 1/2-inch dice
1/2 cup fresh cranberries
2 tbsp pure maple syrup
1 cup baby kale or spinach
2 tbsp chopped pecans (Optional)
1/4 tsp crushed black pepper
6 to 8 pieces cooking twine

Directions

1. Saute shallots & garlic with olive oil in a large skillet over medium heat until golden
2. Add the butternut, cranberries, maple syrup and water and cook for 10 minutes, stirring occasionally

3. Add spinach, pecans, salt & pepper and cook until spinach is wilted.

4. Cut a small slit in the turkey breast & season the meat with a sprinkle of salt
5. Position 3-4 pieces of twine under the turkey and begin to stuff the breast with the butternut mixture. Once stuffed tie the twine tightly.

6. Heat the skillet with oil and place the stuffed & tied turkey in the pan to brown the meat on 3 sides (do not put the stuffing side down or you will loose some of the stuffing).

7. Position the seared turkey in an oven safe pan. Place the meat thermometer in a wide part of the meat. Cook to 74C.
8. Bake for 25-30 minutes

9. Allow to rest for 5 minutes before cutting in half or thirds and serving.
