Flourless Chocolate Quinoa Cake

If you're looking for a truly gluten free cake this is the one. It is so rich and dense you probably will struggle to finish your piece.
Ingredients
2/3 cups Quinoa
1 1/3 cup water
1/3 cup milk
4 eggs
1 tsp vanilla
3/4 cup butter - melted
1 1/2 cup sugar
1 cup cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Directions
- Rinse quinoa in fine sieve with cold water. Place the rinsed quinoa in a small saucepan with water and bring to a boil. Reduce heat to a simmer, cover and cook for 10 minutes. Then remove from the heat and let stand covered for 10 minutes. Fluff and cool with lid off.
- Sift together sugar, cocoa powder, baking powder, baking soda and salt.
- In a food processor, blend the milk, eggs, and vanilla for 1 minute.
- Add cooled quinoa to the food processor and blend until smooth.
- Add melted butter and blend well. You can pour through the hold in the middle of the food processor top while its running.
- Add sifted dry ingredients and blend for 2-3 minutes.
- Prepare a 9 × 13 pan with cooking spray.
- Pour the cake batter into the prepared pan and bake for 45-40 minutes at 350F.
- Test with a toothpick, this will not come out fully clean because the cake is so rich but it should come out no longer wet.
