Nanaimo Bars

Nanaimo bars are a Canadian icon but many people are scared to make them. The homemade ones are so much better!


Ingredients

Bottom Layer

1/2 cup unsalted butter
1/4 cup sugar
5 Tbsp cocoa
1 egg beaten
1 1/4 cups graham crumbs
1/2 cup finely chopped almonds
1 cup coconut

Middle Layer

1/2 cup unsalted butter, melted
2 Tbsp and 2 tsp cream
2 Tbsp Vanilla custard powder
2 cups icing sugar

Top Layer

6 squares semi-sweet chocolate (6 oz)
2 Tbsp Unsalted butter

Directions

For the bottom layer

1. Chop almonds in food processor until finely chopped.
2. Melt butter, sugar and cocoa together in the top of a double boiler.
3. Add egg and stir to cook and thicken.
4. Remove from the heat and add in graham crumbs, coconut and nuts.
5. Press firmly into an ungreased 8 inch square pan.

For the middle layer

6. Melt butter then mix together with cream, custard powder and icing sugar
7. Beat until light and fluffy
8. Spread over bottom layer
9. Chill in the refrigerator for at least 1 hour to set the middle layer

Top layer

10. Melt chocolate and butter over low heat.
11. Pour over middle layer
12. Let sit on the counter for approximately 5 minutes to cool the chocolate.
13. With a fork draw designs on the chocolate layer and then chill in fridge until time to cut and serve
