Chicken Mole

Sometimes I crave a good spicy chocolate sauce and this is the recipe to fix that craving.
Ingredients
4 pounds boneless, skinless chicken (about 12 thighs or 6 breasts chopped)
Coarse salt
1 can diced tomatoes
1 medium yellow onion, roughly chopped
1/2 jalapeno pepper or use 2 heaping tablespoons of pickled jalapenos
1 small can chipotle chile in adobo sauce
1/2 cup sliced almonds, toasted
3 ounces unsweetened chocolate, finely chopped (1/2 cup)
1 Tablespoon white sugar
3 garlic cloves, smashed and peeled
3 Tablespoons extra-virgin olive oil
3/4 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Directions
1. Season chicken thighs with salt and place in a 5-to-6-quart slow cooker.
2. In a blender, puree tomatoes, onion, jalapeno, chipotle chiles, almonds, chocolate, sugar, garlic, oil, cumin, and cinnamon until smooth.
3. Add tomato mixture to slow cooker, cover, and cook on high until chicken is tender, 4 hours (or 8 hours on low).

Ingredient Note
- Chipotle peppers in adobo sauce are smoked jalapenos with a fiery taste that are canned in adobo sauce. Look for them in the Hispanic section of large supermarkets and in specialty stores.
