Spinach Artichoke Manicotti

Sometimes I crave a good stuffed pasta and since I could have eaten the filling all by itself the pasta just adds another layer of wonderful flavour.
Ingredients
2 boxes manicotti
2 chicken breasts cooked, shredded chicken (optional)
2 handfuls fresh spinach
3 shallots
3 cloves garlic, minced
1/4 cup chicken/vegetable broth
400 mL can artichokes, drained and chopped
500 mL container of ricotta
1 egg
1/4 cup freshly shredded Parmesan cheese
Directions
1. Cook the manicotti according to package directions.
2. For the filling, drizzle some olive oil into a skillet.
3. Cook the onion until tender.
4. Deglaze the pan with the broth.
5. Add in the spinach and garlic and cook until the spinach is wilted and most of the liquid is cooked out.
6. Remove from heat.
7. Mix together the ricotta, spinach mixture, chicken, artichokes, and the egg and Parmesan cheese.
8. Preheat the oven to 350 degrees.
9. Using either a pastry bag or a zipper bag with the corner cut off, fill each tube of manicotti with the filling.
10. Place them in a 9 × 13 casserole pan. Pour marinara sauce over the top, such as Vodka Sauce.
11. Sprinkle with Parmesan cheese all over the top.
12. Bake for about 20 minutes or until the filling is hot and the cheese on top is melted and lightly browned.
