Fried Rice

I make this with my grade 7 classes, they always think its going to be so hard and no one ever wants to put the oyster sauce into their batch of rice. The class is surprised how good and easy this is to make. When I'm at home I make this with leftover rice and it is a huge hit!
Ingredients
1 1/2 Tbsp. butter, divided
1 eggs, whisked
1 medium carrots, peeled and diced
1/2 small white onion, diced
1/4 cup frozen peas
1 cloves garlic, minced
salt and pepper
2 cups cooked and chilled rice
1 green onions, thinly sliced
2 Tbsp. soy sauce, or more to taste
1 tsp. oyster sauce (optional, but it is what gives the fried rice it's traditional flavour)
1/4 - 1 tsp. toasted sesame oil (depending on how strong you like the sesame flavour)
Directions
1. Heat 1/2 tablespoon of butter in a large skillet over medium-high heat until melted.
2. Add egg, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.
3. Add an additional 1 tablespoon butter to the pan and heat until melted.
4. Add carrots, onion, peas and garlic, and season with a generous pinch of salt and pepper. Saute for about 5 minutes or until the onion and carrots are soft.
5. Increase heat to high, add in the remaining 1 1/2 tablespoons of butter, and stir until melted. Immediately add the rice, green onions, soy sauce and oyster sauce (if using), and stir until combined.
6. Continue stirring for an additional 3 minutes to fry the rice.
7. Then add in the eggs and stir to combine.
8. Add the sesame oil, stir to combine, and remove from heat
