Salmon Tartar

This appetizer is extremely easy and tasty.


Ingredients

8 oz skinless boneless salmon
? cup finely diced English cucumber W/skin on.
2 Tbsp fresh lime juice
2 finely chopped green onion
1 Tbsp chopped fresh cilantro
1 ? tsp Olive oil
2 tsp minced fresh jalapeno
2 tsp minced fresh shallot
1 tsp fresh grated ginger
Zest of one lime
1 tsp sesame oil
Salt and pepper to taste
2 Tbsp sesame seeds

Directions

1. Freeze the salmon fillet.
2. Remove and thaw salmon just enough to make finely chopping it easier
3. Mix marinade, combine with salmon and let sit for 30-40 minutes. Don't let it marinade too long.
4. Serve on Rice Crackers and top with sesame seeds.
