Wings

Everyone I know loves wings but they seem to hard to make. I know I've said this before but they're not hard to make. My grade 10's made these and believe me when I say that the wings disappeared!


Ingredients

1 lb chicken wings
2 tbsp olive oil
1 tsp black pepper freshly ground
2 tsp sea salt
1 tbsp parsley fresh, chopped for garnish

Directions

1. Preheat oven to 425 F degrees. Line a baking sheet with parchment paper.
2. Place all wings in a medium sized bowl. Drizzle the wings with the olive oil and toss well, making sure each wing is coated with a bit of olive oil.
3. Sprinkle the chicken wings with the pepper and salt, and toss well.
4. Arrange the wings in a single layer on the prepared baking pan. Bake for about 40 to 45 minutes or until they're golden crisp.
5. Sprinkle with more salt and pepper or with a sauce/topping if preferred and garnish with some chopped parsley.
6. Serve while warm.

Buffalo Sauce

1/3 cup hot pepper sauce (such as Frank's RedHot)
1/4 cup cold unsalted butter.
1 tablespoons white vinegar.
1/4 teaspoon Worcestershire sauce.
1/4 teaspoon Garlic powder
Pinch Cayenne pepper (Optional)

Directions

1. Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper & garlic powder in a pot and place over medium heat. Bring to a simmer while stirring with a whisk.
2. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

Peanut Sweet Chili

1/3 cup sweet chili sauce
2 tablespoons peanut butter
2 tablespoons lime juice (~1 lime) or 1 teaspoon tamarind concentrate
1 tablespoon fish sauce or soy sauce
1 tablespoon chili sauce (such as Sriracha) or to taste

Directions

1. Meanwhile, mix the remaining ingredients in a small sauce pan over medium heat until the peanut butter as melted and set aside.
2. Toss the wings in the sauce and enjoy!
