Pesto Salmon

It's a little harder to check for doneness with the nick and peak method but that's ok.


Ingredients

Fillet of salmon or steelhead trout
Homemade pesto (store bought would work too)

Directions

1. Preheat oven to 400F
2. On a baking sheet with sides place the salmon skin side down.
3. Cover salmon with pesto and allow to marinate for 10-15 minutes at room temperature.

4. Bake for 15 minutes then with a fork check for doneness by nicking the flesh and peaking to see if it is done. It should flake apart semi-easily. Add more time if necessary but be careful to not over cook the fish as it will dry out quickly.

5. Serve with a side of Greek Lemon Potatoes
