Chunky Corn Chowder

This chowder is super easy and will warm you up on a cold winter night!
Yield: 6 medium bowls
Ingredients
3 Tbsp Butter
1/2 large onion chopped
1/2 cup celery small diced
1/2 cup carrot small diced
1/2 cup pepper small diced
2 cups small diced potatoes (approx. 1 large potato)
1 tsp salt
1/2 tsp each dried thyme & pepper
2 Tbsp flour
2 cups chicken stock
2 cups corn
1 cup milk
Directions
1. In a large heavy saucepan, melt butter over medium (4-5) heat
2. Add onion, celery, carrot, pepper, potatoes, salt, thyme and pepper
3. Cook stirring for 5 minutes or just until vegetables are starting to soften
4. Sprinkle with flour
5. Cook stirring for 1 minute
6. Pour in chicken stock stirring until blended
7. Bring to a boil
8. Reduce heat & simmer (2-3) for 10 minutes.
9. Check potatoes by tasting then add corn cook for 5 minutes
10. Stir in milk and allow to come to a low simmer
11. Serve warm
