Southern Style Biscuiuts

Yield: 6-8 biscuits


Ingredients

2 cups flour
1 teaspoon salt
1 Tablespoon baking powder
1 teaspoon sugar
2 ounces cold butter, cut into small pieces (or for best results, 1 ounce butter and 1 ounces lard)
* 2oz = 1/4 cup = 56g
6 ounces buttermilk + extra as needed a tablespoon at a time
2 Tbsp melted butter for topping
2 Tbsp sugar for topping

Directions

1. Preheat oven to 500 degrees, arranging a rack on the top shelf of the oven.
2. Combine all dry ingredients in a bowl and stir with a whisk to combine.
3. Add butter/lard and rub between your fingers or with a pastry cutter until the mixture looks like coarse meal.
4. Add cold buttermilk and with a spatula, slowly and gently bring the dough together.
5. Turn out onto a lightly floured board and knead once or twice to form a smooth dough.
6. Pat into a mass about 3/4 inch thick and using a biscuit cutter or cup, cut into 2 rounds.
7. Brush with melted butter, sprinkle with sugar and bake 8-10 minutes until golden.
8. Biscuits are done when tapping on the bottom produces a hollow sound
9. Enjoy with a bit of jam or as a side dish for a soup
