Flourless Chocolate Quinoa Cake

If you're looking for a truly gluten free cake this is the one. It is so rich and dense you probably will struggle to finish your piece.


Ingredients

2/3 cups Quinoa
1 1/3 cup water
1/3 cup milk
4 eggs
1 tsp vanilla
3/4 cup butter - melted
1 1/2 cup sugar
1 cup cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Directions

  1. Rinse quinoa in fine sieve with cold water. Place the rinsed quinoa in a small saucepan with water and bring to a boil. Reduce heat to a simmer, cover and cook for 10 minutes. Then remove from the heat and let stand covered for 10 minutes. Fluff and cool with lid off.
  2. Sift together sugar, cocoa powder, baking powder, baking soda and salt.
  3. In a food processor, blend the milk, eggs, and vanilla for 1 minute.
  4. Add cooled quinoa to the food processor and blend until smooth.
  5. Add melted butter and blend well. You can pour through the hold in the middle of the food processor top while its running.
  6. Add sifted dry ingredients and blend for 2-3 minutes.
  7. Prepare a 9 × 13 pan with cooking spray.
  8. Pour the cake batter into the prepared pan and bake for 45-40 minutes at 350F.
  9. Test with a toothpick, this will not come out fully clean because the cake is so rich but it should come out no longer wet.
