Apple Pie Bars

This is a crumble top bar and it is a great way to use soft apples.


Ingredients

Crust

4 cups flour
1 cup sugar
1 tsp baking powder
1 tsp salt
2 cups butter / margarine
4 egg yolks beaten (whites used with filling)

Filling

4 cups apples - peeled, cored and sliced 1/8 inch thick
1/2 cup sugar
1/2 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
2 egg whites slightly beaten

Directions

  1. Prepare 9×13 pan with parchment at the bottom and cooking spray along the sides
  2. Combine flour, sugar, baking powder and salt; cut in butter
  3. Mix in egg yolks, this will make mixture crumbly
  4. Press half mixture in the bottom of prepared pan
  5. In a separate bowl mix together filling ingredients: sugar, flour, cinnamon and nutmeg and toss over prepared apples.
  6. Assemble apples tossed with spices over the pressed crust
  7. Brush egg whites over top of the apples liberally
  8. Crumble the remaining crust over top of the apples
  9. Bake at 350 for 35 minutes
  10. Cool thoroughly before serving
